This “Velvety Collagen-Boosted Butternut Squash Soup” is a creamy, nourishing dish perfect for cooler weather, giving you a collagen boost with every comforting bite!
Ingredients:
- 1 scoop Advanced Multi Collagen Protein Powder
- 1 medium butternut squash (peeled, seeded, and cubed)
- 1 small onion (chopped)
- 2 garlic cloves (minced)
- 3 cups vegetable or chicken broth
- 1/2 cup coconut milk (or cream for a richer flavor)
- 2 tablespoons olive oil
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- Fresh thyme (for garnish)
Instructions:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened (about 5 minutes).
- Add cubed butternut squash and broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the squash is tender.
- Use an immersion blender (or transfer to a blender in batches) to blend the soup until smooth and creamy.
- Stir in the coconut milk, collagen powder, nutmeg, salt, and pepper. Let the soup simmer for an additional 5 minutes to allow the flavors to combine.
