Ingredients:

  • 1 scoop Advanced Multi Collagen Protein Powder
  • 1/2 cup pumpkin puree (unsweetened)
  • 1 1/2 cups rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)
  • 1/4 cup mini dark chocolate chips (optional)
  • 2 tablespoons chia seeds or flaxseeds (optional for extra fiber)

Instructions:

  1. In a large mixing bowl, combine the collagen powder, oats, and pumpkin pie spice.
  2. Add the pumpkin puree, almond butter, honey, and vanilla extract. Mix well until the ingredients are fully combined.
  3. Stir in the chia seeds or flaxseeds and the mini dark chocolate chips, if using.
  4. Roll the mixture into small bite-sized balls (about 1-1.5 inches in diameter).
  5. Place the energy bites on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Store the bites in an airtight container in the fridge for up to a week or freeze for longer storage.
