Ingredients:
- 1 scoop Advanced Multi Collagen Protein Powder
- 1/2 cup pumpkin puree (unsweetened)
- 1 1/2 cups rolled oats
- 1/2 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)
- 1/4 cup mini dark chocolate chips (optional)
- 2 tablespoons chia seeds or flaxseeds (optional for extra fiber)
Instructions:
- In a large mixing bowl, combine the collagen powder, oats, and pumpkin pie spice.
- Add the pumpkin puree, almond butter, honey, and vanilla extract. Mix well until the ingredients are fully combined.
- Stir in the chia seeds or flaxseeds and the mini dark chocolate chips, if using.
- Roll the mixture into small bite-sized balls (about 1-1.5 inches in diameter).
- Place the energy bites on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store the bites in an airtight container in the fridge for up to a week or freeze for longer storage.
